Instructions
Peel the pineapple, remove the core, and slice it into 1/2-inch thick rings or wedges.
In a small bowl, combine the melted butter, brown sugar, ground cinnamon, and vanilla extract. Stir until the mixture is smooth and well combined.
Preheat your grill or grill pan to medium-high heat. Lightly oil the grates or surface to prevent sticking.
Brush both sides of the pineapple slices generously with the brown sugar mixture.
Place the pineapple slices on the grill and cook for about 3-5 minutes per side, or until grill marks appear and the edges caramelize.
Remove the pineapple from the grill and let it cool for 1-2 minutes before serving.
